Appropriate Units for Reaction.
[edit]Starch conversion units for amylase is measured by the number of Umoles of product (maltose) per 1 minute. Starch molecular wt (substrate) varies from 1000 to over 50000000, but the product wt covers a more limited range. There are variable defs of EU, each is practical for the type of reaction.61.68.4.208 (talk) 01:10, 17 December 2017 (UTC)
