胰蛋白酶(英語:Trypsin)是一種

胰蛋白酶在小腸工作,它會將蛋白質水解為,進而分解為胺基酸。這是蛋白質能被人體吸收的必要過程。這種酶的作用原理和其他絲氨酸蛋白酶差不多。

胰蛋白酶的最佳pH值約為8,溫度約為37℃。

胰臟製造的是沒有活性的胰蛋白酶原。它分泌到小腸後,小腸內的腸肽酶會活化它,令它成為胰蛋白酶。已經變成胰蛋白酶的,能活化更多胰蛋白酶原,這種過程即自動催化,所以只需少量腸肽酶便能開始消化反應。這種過程能避免胰臟被活化的酶消化。

胰蛋白酶選擇水解蛋白質中由離胺酸Lys或精胺酸Arg的羧基所構成的肽键。 如果脯氨酸Pro殘基位於切割位點的羧基測,則不發生切割。
